F&N 203 – Day 10 – Pasta & Tomato Sauces

  1. Each group of 4 students completes the following:
    • Prepare 1 recipe Potato Gnocchi with Browned Butter and Sage (Prepare the full recipe of Potato Gnocchi but cook only 1 serving with the browned butter and sage.  Remaining uncooked gnocchi is to be frozen on sheet pans and stored.)
    • Prepare 1 recipe Ravioli di Ricotta (Prepare the full recipe of Ravioli but cook only 1 serving with the marinara.  Remaining uncooked ravioli is to be frozen on sheet pans and stored.)
    • Prepare 1 recipe Tagliatelle (Prepare the full recipe.  Cooking the pasta is optional. Remaining uncooked tagliatelle is to be portioned, dried and stored.)
    • Prepare 1 recipe Marinara.
